This recipe makes 48 individual phyllo cups which will easily serve 10-12 people appetizers. If you are bringing them to a party, they are easy to transport in the plastic containers the phyllo cups were packaged in.
Ingredients:
- 1 Teaspoon Dijon mustard
- 1/2 Cup sour cream
- 1/4 Cup mayonnaise
- 1/2 Tablespoon lemon juice
- 1/4 to 1/2 Teaspoon curry powder (optional)
- 2 12.5oz Cans of chicken breast, drained and shredded
- 3/4 Cup celery, finely chopped
- 48 Small seedless red grapes (or 24 large grapes cut in half)
- 1/4 Cup chopped pecans
- 48 Frozen Phyllo cups, thawed
- Salt and Pepper to taste
Directions:
In a large bowl combine the mustard, sour cream, mayo, lemon juice and curry. Add the chicken breast and celery. Season with salt and pepper. Cover and chill for at least 1 hour. When ready to serve, fold in pecans, fill the cups and top with 1 small grape or 1/2 grape if they are larger.
