Chicken Parmesan

You need to start out with the right size chicken breast. Ideally a 5-6 ounce breast which is about 1/2 inch thick is best. But finding that size breast is not easy. So take larger breasts and cut them lengthwise or pound them to get the right size portion. Serves 4.

Ingredients:

  • 4 Chicken breasts, each about 6 ounces and 1/2 inch thick
  • 1 Cup seasoned dried bread crumbs
  • 1/2 Cup Egg substitute (or 2 beaten eggs with a tablespoon of water)
  • 1/2 Cup flour
  • 4 Tablespoons vegetable oil for cooking
  • Cooking spray
  • 2 Cups of your favorite red sauce, or The Net Gourmet Sauce
  • 3/4 Cup shredded mozzarella cheese
  • 1/4 Cup graded Parmesan cheese

Directions: Preheat oven to 375ยบ F.

First, setup your assembly line using 3 shallow bowls. Put the flour in one, beaten egg in the next, and bread crumbs in the third.

Spray a 9″ X 12″ baking dish with cooking spray and add the sauce to the bottom of the dish so it’s about 1/4 inch deep. Set aside.

Heat a heavy frying pan to medium high heat. Add 2 tablespoons of oil. Dip the chicken breasts in the flour, then egg mixture, then press in the bread crumbs and cook in the frying pan just until the bread crumbs are golden. Do in two batches as not to crowd the pan. When browned, place them in the baking dish on top of the sauce. You are just browning the outside, you do not need to cook the chicken.

When all chicken is browned and in the baking dish, place it in the oven and cook for 15 minutes. At that point, add the cheeses to the top, return to oven for an additional 10 minutes until cheese is bubbling,
