Bacon, Egg, Lettuce, Tomato, Cheese, Onion.
It was going to be the typical BLT for a Saturday afternoon lunch when Mrs. The Net Gourmet said “can’t you make it a little more interesting”?
So I just took a quick look in the fridge and came up with some Swiss cheese, a slice of red onion, and of course, a fried egg. (Note: this was WAY before the current “add a fried egg to anything trend”.
You can make any number of variations on this. The image shows an over easy egg, but sunny is great if you like it that way. In the past I’ve added arugula instead of lettuce, Vidalia instead of red onion and top will salsa for a Mexican flair. Serves 2.
Ingredients:
- 2 Eggs
- 1 Teaspoon butter
- 4 slices Bacon
- Lettuce for two sandwiches
- 2 slices ripe tomato
- 2 slices red onion
- 2 Slices Swiss cheese
- 2 Bulkie rolls
- 2 Tablespoons mayonnaise
Directions:
Cook the bacon in a frying pan till browned a little. Set aside.
In the same pan, heat the butter and crack in two eggs. Fry as you like them, over easy or sunny side up. I really suggest leaving the egg somewhat runny. It really enhances the sandwich by almost creating a sauce.
Layer on the rolls:
Mayonnaise, bacon, tomato, lettuce, onion, cheese and egg. (The order is really not important).
