
Baked fish just about always needs a cracker crumb topping. Many chicken dishes use it too. So, I keep a plastic container with this topping in the freezer at all times. Ready to go for that quick baked fish dinner.
Ingredients:
- 1 Sleeve Saltine crackers crushed
- 1 Sleeve Ritz crackers crushed
- 1/3 Cup grated Parmesan cheese
- 1/2 Cup melted butter
- 1/4 Cup White wine, sherry, or dry vermouth
- 1/2 Cup chopped scallions
Directions:
You can use a food processor to chop the crackers, but I find it just as easy to crush them right in the sleeve they come in. Using the flat side of a meat tenderizer, I just give them a pound and then squeeze them. Add them to a bowl then add the other ingredients and give them a toss.
Store them in an airtight container in your freezer until needed.
