Linguine with Clam Sauce

This could very easily be the quickest to the table recipe we have ever posted. It is a go to in our house. We always keep a can or two of chopped clams in the pantry, and we always have some sort of pasta available.  So on those busy nights when you don’t have the time to cook a “meal”, this is a winner.

This recipe is for 2 people

Ingredients:

  • 1 Can Snows chopped (or minced) clams
  • 1/4 Cup dry white wine or chicken broth
  • 1 10 ounce package of fresh pasta or 1/2 pound dried linguine
  • 2 Cloves fresh garlic, mashed
  • 1 Tablespoon olive oil
  • 1 Tablespoon butter
  • 1 Teaspoon dried parsley flakes (not required)
  • 1/2 Teaspoon red pepper flakes (optional)

Directions:

Cook pasta according to package directions.

In a small sauce pan, heat olive oil and saute garlic until fragrant. Do not let the garlic brown. Add the clams and their juice, wine or broth, parsley, red pepper flakes and butter. Bring up to serving temperature. Do not boil.

Drain pasta and pour the clam sauce over the pasta.
