Grape Tomato & Mozzarella Caprese Salad

There is one common theme when it comes to the backyard garden… when tomatoes are ready you typically get more than you can possibly eat. This salad is a winner if you have a couple grape tomato plants. It’s similar to a Caprese salad, but instead of full sized sliced tomatoes, this uses grape tomatoes.  This salad works great with cherry tomatoes too.

Ingredients:

  • 2 Cups grape tomatoes, cut in half
  • 8 Ounces small Mozzarella balls
  • 1/4 Cup fresh basil cut in strips
  • 1/4 Teaspoon dried oregano
  • 3 Tablespoons extra virgin olive oil
  • 1 Tablespoon red wine vinegar
  • Salt and Pepper to taste

Directions:

Place the cut tomatoes, mozzarella and basil in a large bowl. Note: When cutting the tomatoes in half, be sure to reserve and juice and add to the salad.

In a small bowl whisk together the oil, vinegar, oregano and a pinch of salt and pepper. Pour over the salad and toss.

Serve on chilled plates. Serves 4

Note: Amounts in ingredients list are not critical. Add more or less as you desire.
