There is one common theme when it comes to the backyard garden… when tomatoes are ready you typically get more than you can possibly eat. This salad is a winner if you have a couple grape tomato plants. It’s similar to a Caprese salad, but instead of full sized sliced tomatoes, this uses grape tomatoes. This salad works great with cherry tomatoes too.
Ingredients:
- 2 Cups grape tomatoes, cut in half
- 8 Ounces small Mozzarella balls
- 1/4 Cup fresh basil cut in strips
- 1/4 Teaspoon dried oregano
- 3 Tablespoons extra virgin olive oil
- 1 Tablespoon red wine vinegar
- Salt and Pepper to taste
Directions:
Place the cut tomatoes, mozzarella and basil in a large bowl. Note: When cutting the tomatoes in half, be sure to reserve and juice and add to the salad.
In a small bowl whisk together the oil, vinegar, oregano and a pinch of salt and pepper. Pour over the salad and toss.
Serve on chilled plates. Serves 4
