Spaghetti with Oil and Garlic AKA Aglio Et Olio

Spaghetti with garlic oil. One of the quickest and easiest pasta dishes… and it’s great.

Ingredients:

  • 1 Pound spaghetti
  • 3 Cloves garlic
  • 3 Tablespoons extra-virgin olive oil
  • 1/2 Cup chicken stock
  • 1 Pinch red pepper flakes
  • 2 Tablespoons flat leaf parsley, chopped
  • Freshly grated Ptarmigan cheese
  • Salt & Pepper
  • 2 Lemon wedges

Directions:

Cook pasta according to package directions.

While pasta cooks, combine the garlic oil. 1/2 teaspoon salt, and pepper flakes in a large skillet and warm over low heat steering occasionally until the garlic is fragrant. About 4-6 minutes. Add the chicken stock and keep warm.

Drain the pasta, but reserve about 1/2 cup of the water. Add the pasta to the garlic mixture. Toss in the warm pan. If it needs a little more liquid, add some pasta water.  Add the parsley. Taste and add S&P if needed. Serve topped with lemon and the grated cheese.

Serves 4-6 people
