Broiled Tomato

Every summer, no matter how many tomato plants we plant, we end up with an abundance of them. If you have had your fill of tomato sandwiches, this is a great way to enjoy the freshness of garden tomatoes. Recipe serves 2.

Ingredients:

  • 2 Tennis ball size fresh tomatoes
  • 4 Tablespoons of parmesan cheese
  • 1 Tablespoon of hard butter, cut in 4 pieces (or drizzle of olive oil)
  • Pinch of sugar
  • 2 Tablespoons chopped fresh basil
  • Optional: some fresh chopped thyme or oregano

Directions: Preheat oven to broil

With a sharp knife, cut the stem area out of the tomato. Then cut a small slice off the bottom so the tomato won’t roll around in the pan. Cut the tomato in half and place on in an oven proof dish cut side up. Sprinkle each with just a pinch of sugar. Add about a tablespoon of cheese. Top with a piece of butter (or olive oil) and then the chopped basil and any other fresh herbs you want.

Broil about 6-8 inches from the element for exactly 4 minutes. Immediately remove from the oven and serve.
