Most meatloafs are boring, but it takes very little to make it the meal of the week. Try this variation on the basic meatloaf recipe.
Ingredients:
- 1/2 Lb Italian sausage, casing removed
- 1 1/2 Lbs Ground beef
- 1/2 Cup minced onion
- 4 Cloves garlic, minced
- 1/4 Cup finely chopped green peppers
- 1 Cup Italian bread crumbs
- 2 Eggs beaten (or 1/2 Cup Egg Beaters)
- 1/2 Cup tomato sauce (any pasta sauce is fine)
- 1/2 Cup red wine
- 1 Teaspoon dried oregano
- Handful chopped parsley
- 3 to 4 Ounces chopped sun dried tomatoes
- 1 Package crispy fried onions (the ones you put on a green bean casserole)
- Your favorite mashed potato recipe
- 1 Cup beef gravy
Directions:
Preheat oven to 350º
Put parsley and oregano in a zip lock bag with a couple tablespoons of water. Microwave for 30 seconds just to make it soft.
Mix all the ingredients except the crispy onions in a large mixing bowl and mix well. Place on a baking sheet or meatloaf pan and form into a long roll 5 to 6 inches thick. Try to make it as “round” as possible. You can even wrap in parchment paper to bake. This helps it keep its shape
Bake for approximately 1 to 1 1/4 hours or until internal temperature reaches 160º. You can do all the above a day or more in advance if you want.
When ready to serve.
Slice the meatloaf into 1 inch slices. Heat an iron skillet with 1 tablespoon butter and i tablespoon oil. Grill meatloaf until heated through and brown crustification forms on the meatloaf.
Place a scoop of mashed potatoes in the middle of the plate. Top with a slice of grilled meatloaf. Ladle a scoop of brown gravy over it. Top the entire thing with a handful of crispy fried onions.
Suggestion:
Serve green beans on the side.
