Popovers

You’ll need a popover pan for this. Don’t try it with a cupcake pan.

Ingredients:

  • 1 Popover pan for 6 popovers
  • 2 Eggs
  • 1 Cup milk
  • 1 Tablespoon melted butter
  • 1 Cup flour
  • 1 Teaspoon salt
  • Spray vegetable oil

Directions: Preheat popover pan in a 400° F oven

Have milk at room temperature, or microwave it for 45-60 seconds. Do not use cold milk. Beat eggs, then mix in milk and melted butter. Add flour and salt. Mix until smooth, but no longer than 30 seconds.

Spray hot popover pan with vegetable spray and fill cups a little more than half full.

Bake for 30 minutes in center of oven. Many popover recipes will say at this point to turn the oven down to 300° F and cook for an additional 20 minutes. I have found this tends to dry out the popover. By cooking for only 30 minutes they are more “gooey” inside.
