What’s not to like about meatloaf? But the typical ground beef with 20% fat can make it something we should go easy on. So, for this meatloaf we are using lean ground turkey.
Ground turkey does change the texture a little. It has a “softer” mouth feel than beef does. Occasionally, I’ll use 50/50 beef and turkey in this recipe. That works well too.
Ingredients:
- 2 Pounds ground turkey breast
- 2 Large eggs
- 2 Teaspoons Worcestershire sauce
- 1 Small onion chopped
- 3/4 Cup quick cooking oats
- 1/2 Cup milk
- 1/4 Cup ketchup
- 1/2 Teaspoon salt
- 1/4 Teaspoon ground pepper
- 1 Cup of your favorite tomato sauce
- Vegetable spray
Directions:
Preheat oven to 350º F
Mix together the oats and milk in a small bowl and let them sit for at least 3 minutes until the milk gets absorbed into the oats.
In a large bowl, mix all the ingredients except the tomato sauce (including the oat/milk mixture) just until it’s combined. Spray a loaf pan with vegetable spray (or line it with parchment paper). Add the meat mixture to the pan and top with the tomato sauce.
Bake about 1 hour or until an instant read thermometer inserted in the thickest part reads 160º F.
Remove from oven and let sit at least 10 minutes before slicing.
Option: Warm another cup of tomato sauce to serve on the cooked mealoaf,
