This is an awesome recipe instead of those deep fried, fat and calorie loaded fries we all love. Will serve about 4
Ingredients:
- 3 Large cloves of garlic, minced
- 3 Tb canola oil
- 4 Large russet potatoes, cut in 1/2 inch fries
- S&P to taste
- 1 Tb finely chopped fresh flat leaf parsley or chopped chives
Directions: Preheat oven to 375° F
- Heat the garlic and oil in a small pan for 2-3 minutes, just until the oil gets flavored, do not let it brown. Strain the garlic oil into a large bowl. Reserve the partially cooked garlic.
- Toss the cut potatoes in the oil then spread them out in a single layer on a cookie sheet.
- Bake until golden brown for 30-40 minutes, turning fries once while cooking.
- Remove from oven and return them to the same bowl. Add the reserved partially cooked garlic, parsley (or chives) and S&P to taste. Give them a toss to coat evenly and serve
