Roasted Rosemary Potatoes

Are you tired of the typical mashed or baked potatoes every night. Roasting potatoes with some herbs is simple and pretty quick. I especially like this recipe when you have the oven already running. This recipe will serve 4.

Ingredients:

  • 4 Medium sized potatoes. Use any kind you have. Gold potatoes work great. New red or white potatoes are fine. If you use russets, cut cooking time by 10 minutes.
  • 2 Tablespoons extra virgin olive oil
  • 2 Tablespoons dried rosemary
  • S&P

Directions: Preheat oven to 375º F

Cut potatoes into wedges and put in a mixing bowl. Add remaining ingredients and toss until well coated. Place in oven proof dish (or a black iron frying pan). Cook for 45 to 50 minutes turning once.

Variations:

Instead of rosemary try using oregano, thyme, garlic powder, onion powder, Italian seasoning, or your favorite spice blend.
